Potatoes are one of the most versatile vegetables. Uncooked potatoes can last anywhere from one week to a few months and potato products are the second most consumed food in the United States. Some common ways to prepare them are French fries, potato chips, mashed potatoes, baked potatoes, potato salad, and on hanukkah – latkes! Making one large latka as a pizza crust and baking instead of frying saves time and makes a great dish for hanukkah. I've added my homemade barbeque sauce recipe, but you can swap with your favorite store-bought barbeque sauce for similar results.
